The best salad I have made this year.

I actually saw this recipe on social media a few days ago, except it called for shrimp. I was all in until several days ago, I decided to remove seafood from my diet. My variation substitutes chickpeas for shrimp. When I tell you, this salad is POPPING! IT'S POPPING!!

Tantalizing Salad


Ingredients


  • 2 diced cucumbers

  • 3 diced plum tomatoes

  • 1 1/2 diced red onions

  • 1 cup of chickpeas

  • 1/2 bag of arugula

  • 1/2 bag of Romain lettuce

  • 3 Chopped hard-boiled eggs

  • ¼ cup chopped walnuts (optional)

  • 1/4 teaspoon Sea salt

  • 1/4 teaspoon Cayenne Pepper

  • 1/4 teaspoon basil

  • 1 cup of olive oil

  • 1 Lime

Directions


  1. In large bowl mix all vegetables, chickpeas and walnuts together.

  2. Blend sea salt, basil, cayenne pepper, and olive oil until completely mixed. (Dressing)

  3. Mix dressing into salad

  4. Squeeze lime over salad and ENJOY!


You have to be creative in the kitchen to live a healthier lifestyle. Face it, abs are made in the kitchen anyway. Eating healthy does not have to be boring or bland. Add some variety to your plate and eat on.
